Chocolate Shortbread Cookies

Cookies Ingredients
1 1/4 cups all-purpose gluten free flour
1/3 cup powdered monk fruit sugar
1/2 cup vegan butter
1/2 teaspoon pure vanilla extract

Chocolate Topping Ingredients
100g Sweet William Dark No Added Sugar Chocolate
30g coconut oil

In a large bowl, add the softened butter and vanilla and mix with a hand mixer on low-medium speed until creamed well. Stir the flour and powdered sugar together. The dough will look crumbly and soft but should hold together when squeezed in your hands. If the dough is too wet, add more flour, or a dash of vegan milk if it is too dry. Leave in fridge for 30minutes before rolling out and baking at 180c for 12-15minutes until lightly golden.
